Irish Salmon Chowder
A gentle cream soup of leek, potato and salmon, thickened only by the potatoes breaking down. The fish goes in at the very end and poaches in the residual heat, which is what keeps it in flakes rather than threads.

Beef Goulash
Beef shoulder braised slowly with a great deal of onion and sweet paprika, thickened at the end into a sauce heavy enough to coat a spoon. Ninety minutes of doing nothing, and most of the flavour is made in the first fifteen.
