Coiled filo with a filling of brined white cheese, egg and yoghurt, baked until the outer spiral shatters and the inside stays soft. Best eaten warm, in the hand, with a glass of ayran.
Beef shoulder braised slowly with a great deal of onion and sweet paprika, thickened at the end into a sauce heavy enough to coat a spoon. Ninety minutes of doing nothing, and most of the flavour is made in the first fifteen.
Crisp layers of filo pastry brushed with butter, filled with spiced chopped walnuts, baked golden and soaked in a hot honey-lemon syrup.
