Lasagne alla Bolognese
The Bolognese original: a ragù simmered for two and a half hours until the meat is silky, layered thinly with béchamel and Parmigiano between sheets of egg pasta. Time is the only difficult ingredient.
Turkish Delight
A soft, chewy cornstarch-thickened sugar gel, slow-cooked and stirred constantly, scented with rose water, studded with chopped pistachios, and dusted in icing sugar.
