Romaine, a proper anchovy-and-egg dressing, parmesan and croutons, with chicken on top. The dressing is the recipe; everything else is assembly.

Ukrainian Borsch
A deep beetroot soup on beef broth with cabbage and potatoes. The colour survives because the vinegar goes in with the beetroot, not into the pot at the end. Served hot with sour cream, dill and crushed garlic.

Pears poached in vanilla syrup, covered in hot chocolate sauce as they are served. The pears can be poached the day before and lose nothing; the sauce is made at the last minute.
