Lasagne alla Bolognese
The Bolognese original: a ragù simmered for two and a half hours until the meat is silky, layered thinly with béchamel and Parmigiano between sheets of egg pasta. Time is the only difficult ingredient.

Squares of plain sponge cake dipped in a thin chocolate icing and rolled in desiccated coconut, so every side is coated in a snowy, textured crust around a soft crumb.
