Lasagne alla Bolognese
The Bolognese original: a ragù simmered for two and a half hours until the meat is silky, layered thinly with béchamel and Parmigiano between sheets of egg pasta. Time is the only difficult ingredient.
Basbousa (Dairy-Free)
A semolina and coconut cake, scored into diamonds, baked until golden, and drenched in a rose-water sugar syrup the moment it leaves the oven so it soaks all the way through.
